Довгий час я думала, що приготувати смачний бульйон то справжнє мистецтво. Те, що виходило у мене зазвичай призводили до каламутну рідину з непевним смаком, а м'ясо було сухим і твердим. Через такі невдачі я користувалася напівфабрикатами, хоча у душі прагнула про ідеальну ароматну, золотаву та прозору страву, яку подавали в ресторанах.

Переглядаючи публікації, я побачила потрібний — «Яловичий бульйон з овочевими галушками». Варто зазначити, що я зосередилася виключно на бульйоні, базова основа став для мене кулінарною істиною.
 
Ось як усе відбувалося:
 
1.  Як було зазначено з [я взяла яловичину на кістці — найкраще для цього підходить гомілка. Поклала м'ясо в каструлю та залила холодною водою, так, щоб рідина повністю покривала шматок.
2.  Нагрівала вміст на максимальному вогні. На цьому етапі критично важливо — прибрати утворений накип, що утворився. У минулому я пропускала цей крок, і бульйон виходив каламутним.
3.  Зменшила вогонь до мінімуму, до стану ледь помітного булькання. Поклала неочищену цибулину, корінь моркви, лавровий лист, духмяний перець і дрібок солі. Томила страву протягом трьох годин, накривши каструлю.
4. Процідила готовий бульйон. Переді мною постав неймовірно прозорим, з приємним золотавим кольором і таким насиченим ароматом, що вся квартира наповнилася затишком.
 
З того часу я часто повертаюся до цього рецепту. Він став основою для моїх улюблених супів, чи просто самодостатньою стравою, яку я збагачую свіжою зеленню та хрусткими грінками. І кожного разу, коли знімаю пробу з готового бульйону, я згадую той самий сайт, завдяки якому я пізнала магію справжнього кухарського мистецтва.
